This is my take on the classic potluck, cookout recipe, Dorito salad. It is super easy, super fast, and super delicious! It is great for a casual weekday lunch or dinner that kids and adults love. Take to a potluck or cookout and everyone will want the recipe, it's that good! This can be made a few hours ahead, but if you make it well in advance save some Doritos and dressing to revive the salad right before serving.
Ingredients:
1lb ground turkey or beef
1 packet of taco seasoning
3/4 cup of water
1/2 red onion
1 head of iceberg lettuce
2 tomatoes
1 15 ounce can of beans (pinto, black, or garbanzo work well)
2 cups cheddar cheese
14-ounce bag of Doritos
1 cup thousand island dressing
Instructions:
Brown the ground meat, stirring occassionaly.
While the meat is browning shred and wash the lettuce and add to a large bowl.
Dice the onion and add half to the ground meat.
Once meat is browned (drain the fat if you are using beef) add the taco seasoning and 3/4 cup of water and let simmer until water evaporates.
Once the meat is done turn off the heat and let remain in pan while you prepare the rest of the salad.
Dice the tomatoes then add to the bowl.
Drain and rinse the beans and add to the bowl.
Add the cheese, meat, all but 2 cups of the Doritos, and dressing to the bowl in that order.
Stir until everything is well coated with dressing. (Tip: If you add to much dressing and it appears too moist add another handful of Doritos. If it seems to dry add more dressing until it is just like you want it).
